Autumn is in the Air

Here at UNCG, we can feel fall in the air. Whether it's football season, the upcoming Fall Fest, or just the chilly night air, students feel the anticipation of this newly arriving season. Some people love the autumn, but if you're a summer lover don't stay inside eating ramen or cold lef-overs just because it is cooling down. Here are some fall recipes for you to enjoy with your roommates and friends for just about any occasion.
Barbecue Chicken Pita Pizza
•Cooked pieces of chicken (leftovers are fine)
•Barbecue sauce, any kind
•Pita bread
•Mozarella or cheddar cheese
First, put the pita on a microwave-safe plate. Put chicken on top of the pita bread, and then pour the desired amount of barbecue sauce onto the chicken. Top with the cheese. To cook, microwave until the cheese is totally melted. If you want to make it crispier, you can use a toaster oven instead, but make sure to keep an eye on it so the bread doesn't burn.
You can also substitute the chicken and barbecue sauce for tomato sauce and pizza toppings. If you want to make it a bit heartier, try using whole-wheat pita!
Autumn Apple Chunks
•Four medium-sized apples
•1/4 cup packed brown sugar
•1 teaspoon cinnamon
•2 tablespoons melted butter
Peel and core the apples and then cut them into quarters. Combine the brown sugar and the cinnamon and set aside. Place the apples in a big, microwave-safe bowl, and then sprinkle the sugar and cinnamon topping over them. Make sure you coat the apples with the topping. Drizzle the melted butter over the apples and cover the bowl with plastic wrap. Microwave for four minutes, stir the apples, and cook for another four minutes. Enjoy!
