Good Eats: Sweet Treats

With fall break over, many of us are looking forward to the next holiday on our list: Halloween. Okay, so we don't get a day off, but a holiday is a holiday, and who doesn't love free candy? To perk up the student population and get us into the holiday spirit, here are some great recipes and ideas for Halloween treats. These can be prepared ahead of time and eaten whenever, especially now that the cold season is approaching.

Candy Corn Krispies

•1/2 cup butter or margarine
•10 cups Rice Crispies cereal
•9 cups mini marshmallows
•2 cups candy corn
•3/4 cup mini chocolate chips
•Yellow and red food coloring (optional)

Melt the butter or margarine and the marshmallows over medium heat on the stove or in the microwave, stirring every 30 seconds until they are smooth. Add 2 drops of yellow and 1 drop of red food coloring to the marshmallows if desired. In a large bowl, mix the cereal, candy, and chocolate chips together. Quickly add the marshmallow to the cereal and stir to combine. If needed, wash your hands, put butter on them, and use your hands to mix thoroughly. Spread onto a large, buttered pan and press. Refrigerate.

Apple Cider

•1 quart apple juice
•1/2 cup brown sugar
•1/2 tablespoon cloves
•1/2 tablespoon cinnamon
•1/8 teaspoon salt

There are two ways to make this cider recipe.

Either combine all ingredients in a pot and simmer on the stove for 20-30 minutes, stirring ocassionally, until everything is warm and blended together. Serve immediately.

OR

Combine all the ingredients into a storage jug and shake well to mix. Refrigerate until ready to serve, then shake, pour the cider into a cup, and heat in the microwave.
