Good Eats: Happy (Chinese) New Year!

Although many people celebrate the New Year on Jan. 1, the Chinese New Year started on Feb. 7. This year of the 12-year cycle is the Year of the Rat. In honor of the Chinese New Year celebration, here are some favorite Chinese food recipes that are simple to make. Treat yourself and some friends to some homemade Chinese food that you didn't have to dial for.

Fried Rice

•2 tablespoons chicken broth
•2 tablespoons rice wine
•1 tablespoon soy saunce
•1 teaspoon dark sesame oil
•1/2 teaspoon salt
•1/4 teaspoon black pepper
•2 tablespoons vegetable oil
•2 large eggs, lightly beaten
•2 cups chopped green onions
•1 tablespoon minced ginger
•5 cups cooked and cooled long grain white rice
•1 pound shrimp, chicken, or pork, cooked and chopped
•10 oz. frozen peas, thawed


Combine first 6 ingredients in a bowl; set aside. Heat vegetable oil in a wok or large nonstick skillet over medium-high heat. Add eggs. stir-fry 30 seconds or until soft-scrambled. Add onions and ginger; stir-fry 1 minute. Add rice, shrimp, and peas; stir-fry 3 minutes or until thoroughly heated. Add broth mixture; toss gently to coat. Cook until all broth is gone and rice is ready.

Spicy Orange Steak and Rice

•3 1/2 oz. bag of boil-in-bag brown rice
•1 tablespoon cornstarch
•2 tablespoons soy sauce
•1 teaspoon dark sesame oil
•3/4 cup of 1 inch slices green onions
•1/2 teaspoon salt
•1 teaspoon minced garlic
•1/2 teaspoon crushed red pepper
•1 pounds boneless sirloin steak, cut into thin strips
•1/2 teaspoon grated orange rind
•1/4 cup orange juice


Cook the rice according to the package, but omitting the salt and butter. Combine the rice and salt, tossing well. Set aside. Toss the garlic, pepper, and beef together. Combine the rind, juice, cornstach, and soy sauce. Stir with a whisk. Heat the oil in a large skillet over medium-high heat and add the beef mixture and onions. Stir-fry for 2 minutes or until beef is cooked through. Add the juice mixture and cook until the sauce thickens, stirring frequently. Serve over rice.
