Good Eats: Fresh as a spring chicken

The season of spring is right around the corner even though it feels as if it has been here for a while. To get in the mood of the oncoming season, we have some spring recipes that contain fresh fruits and cool ingredients to imitate the crisp spring weather.
The great aspect of the chicken and apple salad is that it could be used with ingredients from the Caf if you live on campus and can't get to a grocery store. If they are grilling chicken sandwiches, for example, just ask for the breast. Then use the spice rack, salad bar, and fruit stand to get the rest of your ingredients. The only thing missing will probably be the alfalfa sprouts, but you can omit them or substitute with bean sprouts. The chicken salad makes a delicious sandwich but is great by itself, too!
Easy Chicken and Apple Salad
•1 fuji or other green apple
•1 cup diced, cooked, boneless, skinless chicken breast
•2 tablespoons of chopped green pepper
•2 tablespoons of chopped onions (optional)
•2 tablespoons low fat or fat-free mayo
•1 teaspoon chopped pimiento (optional)
•Pinch rosemary
•Pinch lemon pepper
•Salt to taste
•Any type of lettuce (optional)
•1/2 cup alfalfa sprouts
•2 slices bread (optional)
Slice the apple and remove the core. Chop about 1/2 cup of the apple into small chunks and reserve the other half. Combine with all of the ingredients except for the lettuce, bread, and sprouts, and fold together gently to avoid bruising the apple.
Place lettuce or bread on a plate and top with remaining apple slices, then top with sprouts. Add the chicken mixture and enjoy!
For a variation with some extra protein, throw in a handful of toasted walnuts.
